This
Friday, my friend and I made some delicious Christmas cookies! We made spiced
ginger cooies. For this we used a recipe I have been using and fine-tuning for
a while now and I think we might have finally found the perfect recipe.
What you’ll need (for about 30 yummy cookies)
100 g
butter
100 g sugar
125
molasses
1 egg yolk
250 g
sifted self-rising flour
½ teaspoon
salt
½ teaspoon cinnamon
1 teaspoon
ground cloves
1 teaspoon
ginger (we used about 4 cm of fresh ginger)
½ teaspoon
ground nutmeg
Now onto the baking!
Before
doing the fun stuff, make sure you preheat your oven to 180°C.
Mix in a
big bowl the butter and sugar until creamy and smooth. Then mix the egg yolk
and molasses in as well.
In a separate
bowl, you mix all the remaining dry ingredients. So you mix the self-rising
flower, salt, cinnamon, ground cloves, ginger and ground nutmeg together.
Then, mix
those dry ingredients in with the wet mixture from before. Our final mixture
ended up being waaay to dry. No worries though. If this happens, just add some
milk until you achieve a dough-like consistency.
After this
you are supposed to cover your dough up and put it in the fridge for an hour or
so. I, however, never have the patience for this.
Once you
get your dough out of the fridge, you can roll out you dough on a flat
platform. Then you can get your favorite Christmassy cookie cutters out and
start cutting them up!
If you like
the way your cookies look, you put them in the oven for 11-12 minutes.
When they’re done, get them out on off the oven and let them cool off for a bit. If you want, you can decorate them, but I don’t like the cookies to be too sweet so I haven’t.
